Du hast schon richtig gelesen, 6 zeilige Gerste ist bei uns Diastasemalz es
gibt aber schon 2 zeilige Gerste mit den gleichen Eigenschaften
(Harrington).
Die 6 zeilige Gerste wird bei vielen Brauereien eingesetzt, nicht nur bei
Budweiser.
Malt enzymes: Six-row malts traditionally (that is, before recent breeding
advances) yielded higher levels of the desirable starch-degrading enzymes
a-amylases and greater diastatic power (DP).
