There is a main customs office in Nürnberg (link to HZA - HauptZollAmt).
Simply call them by phone or email them what you have to do to register as a hobbybrewer.
Different customs offices handle this in different ways, some have fillout-forms, others accept a simple email without a specific form.
Some customs offices even accept that you only get active when getting above 200 liters.

...since this is a public forum that may also be read by customs officers it's no good idea to write about beer batches that have been brewed without permission. ;)
A grumpy neighbour curious about that strange smell emerging from the neighborhood is enough when he calls the police...

Birk, I'll send you a PM about the customs place. I brewed illegally in Alabama (it is a felony there) but I will do it the right way in Germany...i understand it's at most a few Euros a year.

Law is: 200L free of taxes, for any more you have to pay a fee depending on the quantity and gravity. If i remember correctly it was something around 6 Euro /100L for normal gravities. Once you break the 200L you will be required to keep reporting what you brew _and_ at the end of a year you'll have to turn in some specific form - feel free to ask when you get there...
...hint: wort that gets destroyed and does not reach the state of a finished beverage will not count towards that limit. I am not sure how far into the fermenting process that counts... I think I have destroyed quite some of my wort before bottle conditioning was completely done... tricky question, anyone?

It's pretty much those kegs. I have not yet brewed enough to go there, but i will eventually. There is a variety that requires you to break a small (~.5oz) CO2 cartridge with an adiitional screw/lever - stay away from these for homebrewing. It is crucital to be able to remove the plug in the middle of the top of the keg so you can tap/fill through that hole.

Each of these consists of two parts, a rubber collar and a plastic plug. When opening the keg, the plastic plug gets pushed inside. Normally fixed in place, the collar is easy to remove when the plug's stability is not provided any more. Once the keg is empty you can get the plug out.

There are tapping systems for these kegs, so you can leave the included tap alone and avoid nasty infection/tedious cleaning. One common, plasticy tapper is called "Beer King 2000". A google search (or try ebay immediately) will show you how it looks and where to get it. I got mine on ebay for 6 Euro. (I feel bad for the seller... But then again that reimburses me for some cases where I sold stuff dirt cheap.)

I haven't had one of these kegs (also called 'Partyfass', 'Partyfässchen', or '5L-Dose') since I started thinking about reusing it, but I will get one soon... Soccer games are always a good occasion. If you dont find any more information in the forum I can let you know once I figure it out. The homepage I quoted above also sells empty kegs...

@all: I am sorry to always post links from HuM here, which weirdly contradicts our shared interest of creating diversity. I just know it's a very reliable and good store (only the stupid shipping by GLS gets my goat -- also it's among the least overpriced but premade hobby stuff is always expensive so dont consider that a complaint).

Do you have a brown ale receipe in mind? A friend of mine wants to brew newcastle brown ale (he's from northern England)... I would love a different variety since I dont like that one very much and he would agree as long as it is brown ale...

Are you in the army? If so and you live in a military base i would guess you dont´t need to register at the customs. If you live outside the base in a private house, you should check if you have to register. I know there are some differences with members of the american forces at least with the residents registration office. Maybe this also includes beer taxes as a homebrewer (or taxes in general).

Brewing in the military as far as I know is not allowed, perhaps I should word that better. They do not allow any type of brewing materials to be sent in the military postal service. The APO rules state that specifically, no brewing items in the mail for certain zip codes.

This would have to be done off base. I don't think any single soldier would have the time or be allowed any variations on this because of officers on the prowl for their next target let alone being able to follow some set of rules.

Consider a Mac And Jacks African Amber. It's a Seattle, Wa based company that my wife has me make to remind her of home. It has more body than a New Castle and the Cascade dry hop gives it a great flavor.
